Auntie Ola's Hawaiian Shoyu Chicken
 
This recipe was served to us on our last visit to Molokai by our local neighbor, Auntie Ola. In Hawaii, Auntie and Uncle are used to address elders (not necessarily blood-related) other than parents as a sign of love and respect. This dish is VERY common throughout the Hawaiian islands, most often referred to as "plate lunch," and can be found in almost all local restaurants and even at roadside stands.
 
 
Ingredients:
12 chicken thighs 2 cups soy sauce
2 cups water 1 clove garlic
1 small onion 1 cup sugar
   
Combine all ingredients (except chicken) in large pot and heat until sugar dissolves. Add more sugar if you like it sweeter, more water to lessen the saltiness. Once the liquid comes to medium boil (and the taste of the sauce is to your liking), add the chicken and simmer for 45 minutes (until the meat begins to fall or separate from the bones). Serve with sticky rice and corn on the side. Aloha!
